“Korean BBQ in a Convenient Bowl”
Last Thursday on 6th, there was a grand opening of Cupbop’s 4th location in Downtown Denver. Many people visited Cupbop’s newest location and celebrated its launching of Cupbop’s new brand Ramen 930. Customers lined up in front of the door and many were curious when Ramen 930 will be opened.
So, what is CupBop? It’s Korean BBQ in a cup.

Bop means “steamed rice” so CupBop means “steamed rice in a cup”. Denver-based CupBop owner Daniel Hyunmin Lim franchised the concept from the original CupBop food truck owner Song that started CupBop from Utah in 2013. Thanks to Daniel, CupBop finally arrived in Denver in 2019 April, and ever since, it has been gaining popularity for its delicious food that simplifies Korean cuisine.
They serve a simple menu composed of rice and noodles, spicy marinated pork, sweet marinated beef, and dumplings. Adding their specialty sauces and twists to authentic Korean recipes, Cupbop genuinely created a new style of Korean food.

One of the most popular menus at Daniel’s stores is ‘Combo Bop’, which is a combination of spicy marinated pork, sweet marinated beef, rice and noodles. Customers can choose their spicy level, which ranged from 1 to 10. ‘Rock Bop’ and ‘Veggie Bop’ is also one of the most popular menus as well.

“Korean food has been gaining popularity across American dining. My mother is Korean and she is from Busan, so this food definitely reminds me of my mom’s cooking” said one of the customers during an interview with Colorado Times. Other customers said “I usually do not enjoy spicy food, so I chose their level 3 sauce and it is amazing. I love their concept of topping barbeque meat on the steamed rice with some glass noodles and their original sauces. I’m going to recommend Cupbop to many of my friends.”
Cupbop’s story started in 2013, when Junghun Song visited a food convention in Salt Lake City, Utah. When he was at the convention, he saw many different cuisines but was disappointed to find out that there was not a Korean cuisine vendor. Shortly thereafter, he was inspired to start on his food business journey and invited two of his other friends and started Cupbop Korean BBQ. The team has since incorporated flavors more familiar to American ingredients and has since created a fusion between Korean dishes.
